A short perusal of instagram shows post after post of green tomatoes picked in expectation of first frosts or freezes. If you want something to do with them besides fried green tomatoes, read on:
Refrigerator Green Tomato Pickles
4 green plum tomatoes, sliced
2 cloves garlic, crushed
1 small onion, sliced
½ jalapeno pepper, sliced (optional, or to taste)
2-3 sprigs Dill
1 teaspoon peppercorns
2 tablespoons pink Himalayan sea salt, coarsely ground
½ cup apple cider vinegar
½ cup water
Bring water, vinegar, peppercorns, salt, and garlic to a boil. Let cool.Meanwhile, in 1 pint jar, layer tomato slices, dill, sliced jalapeno pepper, and sliced onions. Pour cooled brine over tomatoes. Screw on lid and refrigerate 24 hours.
