Mediterranean Meatballs with Tahini Sauce (Kofta with Tahini)

Kofta with Tahini Sauce

Kofta
1 pound ground beef (or lamb or turkey)
half a small onion, finely minced or grated
finely chopped parsley
1-2 cloves garlic, minced
spices – ¼ to ½ a teaspoon of : allspice, cumin, turmeric, coriander, cinnamon or nutmeg, paprika
Salt and pepper to taste
1 tablespoon cooking oil of your choice

Combine all kofta ingredients in a bowl, and knead to combine. Shape into meatballs and place in baking dish.

3 small potatoes, cut in half, then cut each half crosswise into slices. If the potato is really narrow, you can cut it crosswise into circles. Par fry them for a few minutes until slightly golden. You can skip the frying step, but I find it makes the finished dish taste better.

Layer the potatoes on top of the kofta

Add half a cup of water, cover with foil and bake for 30 minutes, until it looks like this.

Prepare the tahini sauce.

Tahini Sauce
6-7 tablespoons tahini paste
juice of one lemon
½ cup of water

Add the lemon juice to the tahini and stir. It will thicken to a paste. Add water at that point and stir till smooth. Pour over kofta and potatoes.

Return to oven another 15-20 minutes until the sauce bubbles up nicely.

It is cooked when it looks like this

But my husband likes it to be a bit more golden, so I like to broil it a couple more minutes until it looks like this

We had it with rice and salad.
