Yorkshire Beef Pie | The Levantess

Yorkshire Beef Pie (gluten-free, dairy-free) Before you tell me that this recipe isn’t authentic…I’m not pretending it is. To be honest, I don’t know what authentic Yorkshire beef should taste like. All I know is that when we were kids, there was this recipe called “Yorkshire Beef” in an old Betty Crocker cookbook, and we had it for dinner … [Read more…]

Meatless Monday: Cheesy Potato and Mushroom Egg Frittata

This is the perfect dinner for a Meatless Monday night, when you are just back into the week, and strapped for time. This comes together very quickly, and is delicious. You can make it as cheesy as you like, or omit the cheese.  I cut this to look like pizza slices, called it egg pizza, and the kids scarfed it all down. My son took seconds and … [Read more…]

Meatless Monday- Egg In A Rabbit Hole (Egg with Kale & Spinach, Topped With Cracked Pepper & Sumac)

Eggs In A Hole typically place the egg in the middle of a slice of bread. I like to place mine in the middle of a bed of greens, the kind that would make any rabbit (and veggie-loving human) happy. It’s a fast and easy breakfast, lunch, or dinner, and pretty healthy, too. You get 2 cups of leafy greens in this meal, heart-healthy olive oil, and a … [Read more…]

Thanksgiving and Holiday Season : Macaroni Pie /Baked Macaroni and Cheese

Thanksgiving season is upon us. We have just about 3 weeks to plan and shop. What constitutes the perfect Thanksgiving dinner varies according to region and each particular family. To me, my childhood Thanksgiving dinner is the epitome of comfort food, so I may add to it, but there are certain items that must be on my table or it is not … [Read more…]

Crustless Noodle and Roasted Vegetable Quiche

I had some leftover cooked wide egg noodles and some roasted vegetables from a previous meatloaf meal. The meatloaf was eaten up right away, and  neither leftover side dish would have been enough on its own, so I decided to make them both into a sort of crust-less quiche. (There was about 1 cup of chopped noodles and 1 cup of chopped vegetables, … [Read more…]

Zucchini/Summer Squash Fritters – ijja

I made some fritters for dinner Friday evening to go along with some leftover soup.  I had 1 zucchini, and 2 yellow crookneck squashes. I considered several different ideas before I stopped at Ijja (the Arabic name for these fritters – and also the word for omelet). I didn’t need to consider anything else after that, because, YUM, fritters! This … [Read more…]

Cauliflower Fritters – Emshaat

Cauliflower Fritters – Emshaat I love cauliflower. It is very versatile, and can stand in for chicken to make many recipes vegetarian. In fact, when my son was 3, and I made the following recipe, he thought he was eating chicken. As long as he was eating his vegetables, I really didn’t care what he called it 😉 Several types fritters are … [Read more…]

Saturday Morning Brunch : Potato Egg Frittata (Batata wa Beid)

We make frittatas for a brunch or light dinner often. Potato Egg Frittata in particular is one of my husband’s comfort foods, so it is one that we make most often. I consider it a pantry meal, since it is made with things I have on hand all the time. That makes it convenient for those times we have been running lots of errands and it is suddenly … [Read more…]

Mini Potato Zaatar Egg Muffins

My son is not a big breakfast eater on school days, because it is simply too early for him to get a lot of food in. I do think it is important to try to get some good protein into him before school, so I made these Mini Egg Muffins, which are actually not muffins at all. They are frittatas baked in mini muffin pans. This makes it easy to reheat … [Read more…]

Warm Mediterranean Egg “Salad”

Today’s lunch is a warm egg salad, made with olive oil instead of the standard mayo, and spiced with zaatar and paprika. This is my favorite way to eat hard boiled eggs, and it doesn’t get easier than this.  I sometimes omit the zaatar and paprika, and just add plenty of freshly cracked black pepper and salt.  The fruitiness of the olive oil … [Read more…]
