Eggplant and Tomato “Stew”
We got some local eggplant and tomatoes at the farmer’s market. In the summer, I make this dish many times, using whatever vegetable I have on hand – eggplant, zucchini, cauliflower, etc. It takes about 40 minutes, and doesn’t use a whole lot of ingredients. Fresh, seasonal vegetables taste best simply prepared. I don’t even use spices in this a … [Read more…]
Tilapia on a Bed of Spinach, Topped with Tomatoes, Capers, Onions, & Garlic
This is a colorful seafood dish that can be thrown together quickly, yet has great color and flavor. The most laborious part of this is chopping the tomatoes, onions, and garlic – and you could even use canned chopped tomatoes and their liquid to save even more time. The rest is layering. I have to admit that tilapia is not my preferred seafood, … [Read more…]
Meatless Monday: Tomato Cabbage Bulgur Soup
We had stuffed cabbage over the weekend, and I made sure to set aside any hard to wrap leaves (excessively curly, or very torn). I ended up with about 2 cups, once I chopped them small. I remembered a soup I had several years ago, that included bulgur, and decided to recreate it. It is a nicely hearty soup, perfect for a cold day. This … [Read more…]
Throwback Thursday : Fall Lentil Vegetable Stew
It appears that this time last year was the same kind of chilly, rainy Fall weather that we are having today. I made a lentil stew then that had carrots and spinach, and nicely spiced with curry, cumin, and allspice. This is a wonderfully homey, satisfying stew that can be made with things that most people have on hand. Thus, I have tagged it … [Read more…]
Slow Cooker Kofta (or converting a kofta recipe to a crockpot recipe)
This past weekend, my brother was visiting. We wanted to go out, yet have a home cooked meal and not resort to just getting takeout on the way home. I had already planned on making Kofta with Tomato Sauce (Mediterranean Meatballs with Tomato Sauce), so I thought that I would put my dusty, neglected slow cooker to good use. I made the kofta … [Read more…]
(End of ) Summer Mint Macaroni Salad
If you have a little backyard garden going this summer, this macaroni salad could be a good way to use some of your home-grown produce. We have a ton of mint that I wanted to make use of, as well as pepper and tomatoes growing outside. This salad makes use of fresh mint and lemon juice, extra virgin olive, apple cider vinegar, horseradish sauce, … [Read more…]
Kofta with Tomato Sauce (Mediterranean Meatballs with Tomato Sauce)
This is a tray bake of kofta with potatoes, onions, and tomato sauce. I’ve previously posted a Kofta with Tahini recipe, which is pretty much the same thing, but with a different sauce. This dish can be assembled the night before, and then popped in the oven after you get home from work, so it is a good weeknight option. This is very good … [Read more…]
Tahini Salad – Salata Tahina
This is a traditional salad that you’ll find on any Palestinian mezzeh spread. It is a standard Arabic salad of uniformly small chopped cucumber and tomatoes, with a tahini lemon dressing. Salata Tahini – Salad with Tahini Dressing 1 tomato, chopped into small pieces 1 mini cucumber, chopped into small pieces 3 tablespoons tahini juice … [Read more…]
